Christmas pudding is one of my favourite things to have at Christmas, it's just tradition for me. But I know it's a love or hate product, so how about making it everyones favourite by turning it into chocolate cupcakes.
They're super easy to make, and incredibly tasty. They're not going to impress people, but they're definitely going to be popular.
INGREDIENTS
- 60g cocoa powder (I go with Bourneville)
- 405 tablespoons boiling water
- 175g of softened butter
- 175g caster sugar
- 120g self raising flour
- 1 teaspoon baking powder
- 3 eggs
- Christmas holly decorations
METHOD
First of all pre-heat your oven to around 180 degrees and line a cupcake tray with cupcake cases, I choose Christmas style ones that I picked up from Sainsburys.
Take a large mixing bowl, and sift you cocoa powder into this. First add 4 tablespoons of boiling water and mix together to create a chocolate type paste/syrup, I added a little bit more to make it more paste like as it was still looking a little dry. Then put in the butter, sugar, flour, baking powder and eggs and mix together with an electric beater until smooth and mixed. Then add your food colouring, add as much as you like until you have your desired level of red.
Spoon your mixture evenly across your cake cakes, and put in the oven for around 15 minutes, until the sponge is spongy on top, and is fully cooked. Then leave to cool.
Once it's cool, decorate with your holly decorations and you're done. Super simple and easy.
These are super cute, and very festive. Definitely give them a go this December if you want something easy to make and a crowd pleaser.
